COURSE ONE: “Industrial Nature”
The first course is light and full of seasonal flavors. Pickled artichokes, oven-dried heirloom tomatoes, and local greens adorn a lavash flatbread structure. Drizzled with tarragon vinaigrette.

COURSE TWO: “Alice in Wonderland”
The Mad Hatter would be crazy about Chef Dan’s fresh, black-and-white-striped Pappardelle pasta, filled with funky fungi, tossed in house-made roasted garlic vin blanc sauce, and served over baby kale.

COURSE THREE: “White Trash Royalty”
Start with a rich, buttery faux gras patty. Top it with house-cured bacon and a quail egg. Smother it with tart cherry ketchup and arugula pesto. Then nestle it on a brioche bun and serve with a side of truffle fries. You’ve never had such a sophisticated slider.

COURSE FOUR: “50’s TV Dinner”
Settle in for a wholesome bite of old-fashioned comfort food, including perfectly petite portions of vegan Salisbury steak, creamed corn, and buttermilk mashed potatoes, chased by a made-from-scratch mini cupcake.

COURSE FIVE: “Vintage Quality”
Rich, savory flavors and textures are the key note of this traditional dish. Lamb Wellington (lamb layered with roasted pepper “organza” and baked in a puff pastry) is drizzled with petite syrah reduction and served with pommes boulangere.

COURSE SIX: “Lavender Avant Garde”
Dessert is both sweet and structural, with lavender blueberry mousse over chocolate planks, with merengue pearls and berries.
